The recipe only calls for tofu, spinach, green bell peppers, rice, and green curry sauce. It calls for brown rice, but I don't have any. My roommate went crazy at Costco at the beginning of the year and bought a 50lb bag of white rice... so that's what we all eat. I did actually find green curry sauce at Fresh & Easy, had a green pepper, firm tofu, and a bag of spinach. The rice wasn't a problem at all, I'm sure brown rice would have tasted healthier and would have been different, but I made do.
Something to note before you follow the directions right off the bat is that this recipe makes about 3 servings. I only had 1 green pepper and was only hungry for one, so I sized it all down. I still made a cup of rice but only used about 1/4 cup cooked. I didn't measure any of the ingredients really and eyeballed it to be honest, and added more curry or spinach or tofu as I thought it needed it. Also, I prefer cooked, warm tofu, so I fried mine for a few minutes.
My only suggestions would be more curry, or a more flavorful curry. The green pepper is perfect, I wouldn't recommend a sweeter bell pepper, but I would have liked a little more from the curry sauce. I also have just a "mild curry" sauce that I found at Ralph's, which I will probably try next time I buy a bell pepper. Happy cooking!
