Enchiladas! No cheese needed

"Enchiladas? Vegan? Isn't the main ingredient.. like.. cheese?"

Ok, got me there, but there's a vegan version to everything! This was a recipe I stole from one of the blogs I follow, Oh She Glows, that my roommate agreed to make with me. She's not vegan, but luckily very open to my vegan lifestyle and she's a foodie, so she's always excited to try something different. 

First things first. Disclaimer: I don't love cooking, nor am I particularly good at it, so if I've made something, that means its very possible for anyone else to replicate. Happy cooking! 

This recipe, officially called "Vegan Enchiladas with Cilantro Avocado Cream Sauce," is awesome. I normally stick to recipes that are easy, have ingredients that I already have, and don't require a lot of chopping. This... didn't really fit those categories. I had some of the ingredients so that made it more appealing, but it did require shopping and chopping. *sigh*

It calls for a sweet potato, and I don't think we actually bought a sweet potato. I don't have a clue what superior sold us instead of a sweet potato but it was the wrong color and absolutely impossible to cut. Especially considering we were at our friends' apartment at Century (nothing against century), we were very out of our element.  Other than the mystery wannabe sweet potato, things went well. Other than the small skillet. But that's what you get when you don't size down a recipe that's meant to feed a family. Whoops. 


After chopping and stirring struggles, they were done! The only other issue we ran into was the tortillas. We got them wrapped up and in a line on the baking sheet as instructed, but the edges got much crispier than the pictures showed. Probably our fault, and they tasted great anyway! It's time consuming but a fun group-effort recipe!
