Quinoa Patties with Chickpea curry

I love going home. I get to sleep in my big soft bed and hang out with my weird brother and dog, and I get to eat better food than I do here. Mostly, that's because my mom makes dinner regularly, and I get to help her make vegan portions. And I'm not a great cook, but it helps having things like a giant skillet, or tongs, or a food processor handy for most recipes.

So the difference between cooking at school and cooking at home is that at school, I'm a minimalist. I don't want to buy lots of complicated, fancy ingredients that I'll only use for one obscure recipe and I don't want anything that takes a lot of chopping or time. At home, it's the opposite! I'll willingly go grocery shopping at MOM's or Whole Foods where you can find anything and everything vegan you could ever want. And it's usually expensive, but hey, what are moms for?

Imagine my Troy East, small kitchen with way too much stuff on the counters for them to actually be useful. Now, compare that to how cooking at home, for our family of 4, can sometimes turn out like this:

It was pretty tough for me to make these patties, honestly, since I've never made any sort of veggie burger from scratch before. They were sorta falling apart on me but after a couple fails (think of it like pancakes, the first few always suck), I got it. 



That was the hardest part. The ingredient finding and the chopping and the mixing was all pretty self explanatory and normal, and then the frying wasn't quite so easy. But we ended up making about 12 of the little fritters and they were really good! The final product looked something like... 


I confess, I ripped a part of the right one off.. I was hungry....

For this one, we made it a little easier on ourselves by just heating up some Chana Masala for the base, instead of making all that too. The chickpea fritters were already enough for me to handle. I personally really like Tasty Bite brand microwave food... And on the back of each one it tells you in the upper right hand corner if its vegan. Easy!
